For my country style ribs recipe, I bought both Loin cut country style ribs and shoulder cut Country Ribs (or western style ribs). The first step is the seasoning these country style ribs. Layer on a combination of Salt, Black Pepper, and Garlic powder on all sides and follow that up with a good dusting of The BBQ Rub. (you can get it here: http://www.killerhogs.com/shop.html ) Let the seasoning work on the country style ribs for a few minutes while you start the smoker. I run my smoker for these country style ribs in the 275 range and use a peach wood for smoking country style ribs. After 30 minutes, the rub has draw out a little moisture from the ribs; and to allow some of the seasoning to penetrate into the country style ribs. First the country style ribs get smoked for 1 ½ hours. Half way through this process give each country style ribs a flip to ensure even cooking. You can check the internal temperature in the country style ribs at the 1:15 minute mark. When the ribs hits 150 degrees, that's about all the smoke these country style ribs need. Now you braise these country style ribs iIn a small aluminum pan pour ½ cup of pineapple juice and mix in The BBQ Sauce. (you can get it here: http://www.killerhogs.com/shop.html ) Cover the pan with foil and place it back on the smoker. Let the country ribs cook for another hour and check the tenderness and internal of around 195 degrees. At this point the Country Ribs are cooked so remove from the pan and the country style ribs back on the grate of the cooker. Brush or mop each side with The BBQ Sauce (you can get it here: http://www.killerhogs.com/shop.html ) and let the ribs caramelize for 3-4 minutes on each side. Slow cooked country style ribs done in the oven. Mashed potatoes and spinach on the side. Best. Night. Ever. Mix up your spices in a bowl. Use whatever you want but I usually make sure salt, pepper, garlic, onion, and brown sugar are present. You can take a taste of the spice mix as you make it to test the flavor. Just don’t lick it after raw meat is brought into the picture. Cook the ribs in a foil tent for at least two hours, longer if you can at 300 F. Put some liquid of some sort (just a bit!) in the tent to keep things from drying too much. When meat is marshmallow textured open the tent and put it under the broiler to crisp it up a bit. Father’s Day dawned perfectly, after days of rain, so it was time to get outside! For something different as part of our dinner I decided to try Country Style Rib Burnt Ends. Pork belly burnt ends have been making the rounds, so maybe that is why there are none to be found around here. Here is how the cook went down. 4 Lbs Country Style Ribs / cubed Tsangs Stir Fry Oil Tango Spice Porchetta Rub Savannah Jean’s Sweet & Savory BBQ Sauce Place the pork chunks in a large bowl, add Tsangs, toss to coat well. Add 2 TBS Porchetta Rub / toss to coat Pour onto a baking sheet, spread out in a single layer, add more Porchetta Rub. Cover with plastic wrap and refrigerate for at least an our. We ran the smoker between 250 and 275-ish. After about two hours the internal temp on the large pieces were at 160. We placed all of the meat into two foil pans , single layer. Added Savannah Jean’s Sweet & Savory BBQ Sauce and mixed it all up nicely. Sprinkled more Porchetta Rub to the top of the meat and once again stir the meat to coat well. Placed the pans of meat into the smoker and they were done in about an hour-ish. Actually lost track a bit while jawing with the neighbors. No worries, it’s burnt ends, not brain salad surgery. I did remember to stir the chunks in the sauce though, you should dot it every 30 minutes. The big pieces reached 185°F and I decided to call it, as we were all rather hungry. Nothing better then eating perfectly seasoned fall-off-the-bone PORK RIBS. Easy and simple to do right in your own kitchen in your very own oven...You'll be amazed at your results!! Click on "Show more" below for recipe.... Preheat oven to 300 F. degrees HERB RUBBED OVEN BRAISED PORK RIBS 2 1/2-lbs Pork Ribs 2 teaspoons dried rosemary leaves 2 teaspoons dried thyme 1 1/2 teaspoon kosher salt 1 tablespoon canola oil 1 cup chicken broth In a small bowl, combine salt, rosemary. Rub the seasons over all sides of the meat, pressing to adhere. In a large Dutch oven or heavy ovenproof skillet with tight-fitting lid over medium-high heat, warm canola oil. Add the pork ribs, brown on all sides for 6-8 minutes. Transfer meat to a pan and set aside. Add the broth to the Dutch oven, scraping up any browned bits. Bring the broth to a boil, and then return the pork rib to the pan. Cover and bake until the pork is very tender, about 2 to 2 1/2 hours. Remove ribs to serving dish and let rest 10-15 minutes. Serve with your favorite sauces and side side(s). ENJOY!!!

I started the country style ribs in the iron skillet and finished them off in a 325F degree oven. I started the temp at 375F but lowered it to avoid overcooking and drying out the meat. Also, the time in the oven was actually just a little over 45 minutes and not the full hour. It is always best to check the meat several minutes before you think the time is up to be sure that you don't overcook your meat. You can always put it back in for more time but once it is overcooked, there is very little that you can do to reverse it. Experienced cooks can salvage overcooked meats by using them in a stew or braise them to add needed moisture and tenderize it. UPDATE: Since I made this video, the population of our home has grown to 13!!! Our son and his 10 children moved in with us in November of 2015. I have made this recipe for them many times and they all love it. Our entire family loves "spicey". Some like it spicier than others but they all enjoy the "heat". We hope you continue to enjoy this recipe and I will really try to post more cooking videos. I cook almost entirely from scratch and my family loves it. My grandkids love to cook! My legacy to my grandchildren is one of scratch cooking. I want to touch the next generations of our family through my grandkids and great grandkids love of cooking. Enjoy!

This is going to be the foundation layer of flavour. Once this is done go ahead and place them onto your grill using the indirect method or in our case the center of the the barrel cooker at 275 degrees. You are going to smoke them for one hour. Step #2 While your Country Pork Ribs are smoking you will now go ahead and mix together your braising sauce. Combine your apple juice, 2 cups of bbq sauce and half and onion together. Step #3 After one hour your ribs should be around 145 internal temp. It is now time to remove them from the grill and into your braising sauce. Once your ribs are in the sauce take the remaining bbq sauce and pour it directly on top of the ribs. Wrap the top with foil and place back on the grill for another 1hr-1hr15m. Step #4 After about an hour in your braise you will remove the ribs from the sauce and place back on the grill over direct heat. If you are using a barrel cooker you will leave the lid open a bit to keep the temp a bit hotter. During this time, apply some bbq sauce to both sides and flip them after about 2-3 minutes. We are looking to have the sauce set and char up just a little bit adding to the depth of the flavour. Once this is done, remove from the heat and glaze with a little bit of the thin braising sauce. Original Recipe by Chef Jeff Lucas, LLC Braised Country Style Ribs, with Southern Style BBQ sauce over Cheese Grits Ribs: 1. Bring ribs to room temperature - Approximately 1 hour 2. Generously season ribs on all sides 3. Preheat Dutch oven on stove, over medium-high heat 4. Put in 3-4 tablespoons of canola oil 5. Once canola oil gets hot and expands, gently lay the ribs, flat side down, in the oil. 6. DO NOT TRY TO MOVE THE RIBS!!! Once they have cooked 3 minutes, shake the pan. If they don’t move, they are not done. Once they move freely from the pan, it is safe to flip the rib over. Repeat on all sides. 7. When the ribs have a nice brown crust, remove from pan, and set aside. Don’t clean the Dutch over, as you will use this to cook the ribs. Prepare Dutch oven for the ribs 1. Medium dice mirepoix – 1 medium size onion, 3 ribs celery, and 2 medium size carrots. 5 crushed cloves of garlic, rough chop. 3 springs of whole thyme, and 3 sprigs of whole oregano. Place all these in the Dutch oven. 2. In a mixing bowl, mix 1/3 cup of demi-glace with 3 cups of beef stock. 3. Place the ribs on top of the veggies in the Dutch oven. Pour liquid over the ribs. Make sure the liquid covers all the veggies and comes up ¾ of the way on the ribs. If the 3 1/3 cups of liquid aren’t enough, fill with more beef stock until the desired amount is reached. 4. Pre-heat oven to 275 degrees 5. Place covered Dutch oven in pre-heated oven and set the timer for 3 hours. 6. When the time has expired, check the tenderness of the ribs. If they need more time, check in 20 minute intervals until desired tenderness is achieved. 7. Once done, pull the ribs out and let them set at room temperature. 8. Pull out the stems from the thyme and oregano and discard. 9. Using your hand mixer, pulse the remaining veggies and liquid until smooth, set aside. This is ‘rib broth’. Southern Style BBQ Sauce 1. Rough chop ½ cup of red or yellow onions. 2. Heat a medium saucepan on medium heat 3. Add 2 tablespoons of canola oil and heat till hot and expanding. 4. Add onions and cook till translucent, about 5 minutes 5. In the final minute add 1 tablespoon of minced garlic. Don’t burn!!!! 6. Add 3 cups of rib broth, 1 cup of Creole mustard, and 1 ½ cups of ketchup, mix well. You may want to adjust the amount of mustard and ketchup. If too sweet, add mustard. If too acidic, add a little more ketchup. 7. Bring to a boil, and then reduce heat to a simmer. Make sure the sauce doesn’t burn to the bottom of the saucepan. 8. Simmer for 30 minutes, stirring occasionally. 9. Remove from heat and blend with your hand blender until smoother. 10. Cool and refrigerate. Cheese Grits 1. Bring 3 cups of chicken stock to a boil in a large saucepan. 2. Whisk in 1 cup of polenta, and decrease heat to medium. 3. Constantly stir, with a wooden spoon until thick – about 10 minutes. 4. Add 4 ounces of shredded white or yellow cheddar, and cook for 2 more minutes. 5. Add 1 tablespoon of butter, and season with salt & white pepper. 6. Remove from heat To plate 1. In a small glass or metal pie tin, place the ribs, meat side up, and pour 1 cup water and 1 cup rib broth. Place in a 450 degree, pre-heated oven. Cook for 8 minutes. 2. After the initial 8 minutes, pull the ribs out and ladle a generous amount of southern style BBQ sauce to cover the ribs. Return to the oven for 3 more minutes. 3. On the center of the plate put a scoop of jalapeno cheddar polenta. Shingle the rib(s) over the polenta, making sure to take any excess BBQ/broth from pan and drizzling over the ribs. 4. Garnish with micro-greens.

BBQ Country Style Ribs Ingredients 4 lbs - Country Style Ribs 1 large onion, diced 3-4 cloves garlic, minced or pressed (or coordinating amount from jar) RUB 2 tablespoons smoked paprika 2 tablespoons brown sugar 1.5 tablespoons chili powder 1 teaspoon kosher salt SAUCE 1/2 teaspoon black pepper 1/2 cups ketchup 1 cup BBQ Sauce 3 tablespoons brown sugar 3 tablespoons Worcestershire sauce 3 tablespoons apple cider vinegar 1 teaspoon dry mustard 3/4 teaspoons kosher salt 1 tablespoon vegetable or olive oil Instructions Line a large baking sheet with foil and lay ribs on it Combine all rub ingredients and massage into both sides of meat using your hands. Set aside. In a mixing bowl, whisk together ketchup, BBQ sauce, brown sugar, Worcestershire sauce, apple cider vinegar, mustard powder and salt. Heat pressure cooker to saute function and add oil and onion. Saute for 3-4 minutes, until soft. Add garlic and cook for another 30 seconds, stirring often. Add the BBQ mixture and stir to combine. Add a few ribs at a time and use tongs to gently coat them in sauce. Secure lid on pressure cooker and set to high pressure for 40 minutes cook time. When finished, let naturally release pressure for 15 minutes. Manually release any remaining pressure and then open pot. Place ribs on platter and coat with sauce (see below). SAUCE Once ribs are removed, turn pressure cooker back to saute mode and let sauce boil for 10 minutes. It should thicken up and make a nice sauce for ribs.

This is an easy recipe for smoking country style pork ribs. This was done on a Master Forge 2 door propane water smoker. However, this will work just as well on an electric smoker and even better results on a wood burner/stick burner type smoker. My recipe included: -2 bottles of Stubb's BBQ sauce - Sticky Sweet -10 or 12 ounces of pineapple juice -2 Tablespoons of honey -Oklahoma Joe’s Rib Rub - See recipe below. -Apple wood chips for a sweet and delicate smoke flavor -Smoker temperature should be adjusted to chug-along around 250 degrees F. 4 to 5 hours in the smoker, Total Time. Shoot for an internal temperature of the meat to be about 180 to 190 degrees F. One to two minutes to caramelize the sauce on hot coals or a gas grill will work just as well. —Oklahoma Joe’s Rib Rub— READY IN: 10 mins. Making country style pork ribs in a smoker is easy. My video shows you step by step how to take a country style pork rib and turn it into a delicious meal that makes everyone come back for seconds. Well lets take a look at what ingredients you are going to need: 1 Package of country style pork ribs Six ounces of quality pineapple juice (I prefer Dole pineapple juice) Barbecue Sauce that does not have “hickory” in it BBQ Rub (I make my own check out my video on making your own BBQ Dry Rub) Apple Wood Equipment I used in my video Masterbuilt Electric Smoker (I love it) Disposable pan Aluminum foil Gas Grill (optional) BBQ Sauce Mop Smoked Country Style Ribs Recipe Apply Dry Rub to country style ribs and let them sit in your refrigerator for about an 1 ½ hours before cooking Heat Smoker to 275 degrees and add liquid to water pan during warm up Place ribs in your smoker for about 1 ½ hours until meat is at 150 degrees During first 1 ½ hours make sure to keep the smoke flowing While ribs cooking make bbq sauce mixture in disposable pan When pork ribs at 150 degrees place them in bbq mixture and cover with foil Place the pan back into the smoker for an additional hour of cooking Once the hour is done either place the ribs back into the smoker and cover with sauce to glaze them for about 5 minutes a side, or place them on your grill to caramelize them nicely like it did. Once they are done simply take them off and enjoy. I served mine with some delicous Risotto Rice.
