Forever Sharp is the brand, this knife is a few years old, has a lot of wear and the edge bevel is starting to hit the top of the primary. This really slows down sharpening as I am working the primary grind when sharpening the knife. This is mainly because I set the edge at 10 dps and then micro-bevel just 1-3 passes at about 15 dps (all free hand). This is used in the kitchen by friends and family so I left the edge at a bit on the robust side at 0.010" thick. For a pure fillet (soft food knife) it could easily be worked down to 0.005" thick, but as this one is likely to cut frozen foods and such on occasion I left the additional thickness to prevent a major failure. With the regrind it will now sharpen much faster and show a little improvement in cutting ability. This only took about five minutes per side on a 1x30" belt sander with a 36 grit AO belt. Note the edge was never ground, just the steel above it.

Hi folks, This is my method of how to sharpen knives at home for personal use or for professional use in the restaurant industry or for butchery industry. I was a professional Tally boner for 6 Years in the meat works where we got paid by the number of sheep or beef we could bone out in a set day...!! In my case as a tally sheep boner it was 110 sheep a day so the faster your crew and my self could bone out the sheep carcass, that meant you could finish work sooner and go home. Most of the time is was 20 sheep an hour so that meant you finished in aground 6 hours work time a day. So...To be able to work at that lightning speed ....! " YOU HAVE TO KNOW HOW TO KEEP YOUR KNIFE SHARP...!!!! Only top knife hands could make the grade to be a Tally Bonner..!! That is how I had to learn and understand how to sharpen a knife and to understand the edge concept on an knife, also how to keep it sharp by using a steel to rub the edge of the knife as to keep that sharp edge in the centre of the blade so it would stay sharp as long as It could before I would have to resharpen the knife edge. Now remember... You have a greater chance to cut yourself with a BLUNT KNIFE ...! Than a SHARP KNIFE...!! Regards Tony... :-) Where to buy belt grinder You can buy one all ready set up from All Tool.. Brand name ABBOT AND ASHBY make one in NSW.. BUT THT WILL HAVE TO BE SWAPPED AROUND..!!! I couldn't find many reviews of such knives so i tried making one myself. You can see more information and pictures in the links below. I actually find it the most comfortable out of the four. (Balance, grip, grind and rounding of edges) - It came with a micro chipped blade though (so small, people would not notice) and was as sharp as the other knives, not the sharpest You can probably google "Metro forged proffesional" for the big knife and its smaller versions. Try googling "crap knife" for the other two? AFTER SHARPENING and stropping: (These results are purely subjective and might vary due to my sharpening not being always the same,. I have used cheap water stones and then stropped on leather with diamond paste of various gritts until i had a clean mirror finish) XITUO knife: Is noticably the hardest/most abbrassion resistant, takes an excellent edge. I made this one the sharpest of them all. It cuts through paper with no resistence and shaves mid-air cutting some hairs lengthwise. Vista: Shaves hair just fine but is no crazy sharpness. It cuts smoothly through paper with its own weight (which is not bad being the thinnest knife in the race). Not as sharp as the Xituo though. The fourth knife (Haoye): Comparable with Vista, shaves better but offers more resistence when cutting through paper (Not sure why but it does feel sharper nevertheless) Sunlong: Noticably softest of those four. As i tried to sharpen all four knives in a hurry, i might have not created a burr and failed to sharpen it. I will retry and edit this. EDIT: This time i paid attention while sharpening and succeeded in creating a very, very sharp edge easily equal to the Xituo. That means its just a matter of sharpening skill with all of the knives. I noticed that i couldnt get as a good polish as i have hoped for on this knife and when i looked closely, i could see why. One can see the harder steel at the very edge (a thin layer in the middle) became shiny, while the softer outer steel is matt. That might or might not be the reason this knife feels softer during sharpening. As the "hamon" of this knife is not completely straight and is very close to the edge i had a feeling that i sharpened it wrong at some places, but its only an optical illusion. One problem i did find with this knife though, the handle really doesnt like water and in just the few rinsing cycles ive made trying to clean it from sharpening and vegetables, the wood seems to have somehow dried and the metal pomel and hilt edges are very pronounced now, impossible to ignore. I do recommend getting synthetic handles, or at least to treat your wooden handles prior to use, even if they look treated (oiling it might be a big help)

These Japanese chefs know, how to handle a knife! Being restaurants customers we might not know how functional a knife can become in the hands of a professional! While we don't know the differences between mincing, dicing, and chopping these chefs make a magic on their kitchens! Chefs have to develop a variety of skills, ranging from hard skills related to cooking to managing skills related to their cooking team. Watch an amazing compilation of unreal cutting skills of these chefs and you will definitely be impressed! The kitchen is a fast-paced environment, and a chef has to not only make numerous decisions at once but also work with a knife fast. Knife skills are the building blocks for any cook! Not only knives matter, but technique is important too! The French Nail was a knife made during World War One that was created due to a need for melee weapons in the trenches. It was typically made near the battlefield from local blacksmiths and given to the troops on the frontlines. Since raw materials were in short supply during the war, troops had to salvage the metal to make these knives from whatever they could find. Scrap steel from metal posts and rebar from defensive structures were the chosen material for the French Nail. It features a spear point, leaf-shaped blade with the metal bent in a way to form a guard for the user’s hand all in a one piece construction. It can be seen in the popular video game Battlefield 1. Today, I am going to attempt to craft one of these trench knives. Since these were made from steel salvaged from reinforced concrete fortifications, it's only fitting to use rebar. I will forge out the blade first, cut the steel to the desired length, and grind to shape. I made a number of mistakes along the way, first of which was bending the handle perpendicular to the blade. Later on, I correct this by twisting the blade to be parallel to the handle, even though it wouldn’t have been a problem to the function of the knife. I also made the handle a bit large, which in turn made the blade shorter than I would have liked. Next time, I’ll take extra time to mark out my bends. The grinding really made up for a lot of my shortcomings while forging. I got most of the hammer marks out with a 120 grit finish. Lastly, I sharpen the knife and its ready to test out on some water bottles. While testing the trench knife, I noticed the leaf shape is perfect for piercing. It went in like butter and I almost didn't realize that the knife already had pierced them. I know its just plastic, but blade geometry really makes a difference. Down the road, I plan to make another French Nail, one that is a little more historically accurate and, frankly, better looking. Please let me know in the comments if you liked this video and what you’d like to see me make in the future. ►Patreon: https://www.patreon.com/JunsKitchen ►Sharpeners I use in this video (Amazon affiliates links) ※These sharpeners seem to be sold more expensively outside of Japan. I believe you can find cheaper ones that are decent online as well. Zwilling J.A. Henckels also has good sharpening stones which I have used before. Unlike the ones I used in this video, you don't need to soak it in water to sharpen a knife (but it still needs to be wet). Shapton (Orange) #1000: http://amzn.to/2gI5D3O Shapton (Green) #2000: http://amzn.to/2gI4uco Other cheaper sharpener I found: Japanese King Knife Sharpener Whetstone (#1000 & #6000) http://amzn.to/2gIMph8 Sharpening stones come in grits, and these two grits would be enough for a normal household knife. I used grits 1,000, 2,000, 5,000, 8,000, and 12,000 in this video. The higher the number, the finer the sanding and the sharper the knife will be. Watch more What You Need to Know About Knives videos: http://www.howcast.com/videos/497077-How-to-Use-a-Sharpening-Stone-Knives Learn how to use a sharpening stone in this Howcast video with expert Dan Delavan. Hi. My name is Dan Delavan. I am the Owner/Operator of Plaza Cutlery in Costa Mesa, CA. We have a great selection. We also have a website; plazacutlery.com. Today we are going to be talking about knives. A sharpening stone is a stone that has got a coarse side and usually a finer side, and that is going to take and re-shape your edge and get it back down thin enough in order to sharpen it. You are basically taking something that is blunt and thinning it back down. You have to remove all of this extra metal and get it back down to where it is thin enough to cut. Very simply, all a knife is is a very thin piece of steel to split whatever you are cutting. If the knife is obviously thicker, it is like trying to cut something with a chisel; it is not going to happen. There are two stones. There is the India and there is the crystolon. Once you feel them, obviously the difference is coarseness. The one thing about the India stone, it is a harder stone and the brown is the finer side, you have to use oil with it. You cannot use it dry, so therefore it is messy. The coarse stone will cut the metal off quicker but it is going to give you a rougher edge but that way the job gets done quicker, without the oil. It is not as messy. This is just a real simple set up. If you do wood work you can make a little wooden box and rout it out. In this particular case it is just a 2x4, stone traced out, finishing nails tapped down so they are deeper than the stone so when you drop the stone in, if you are at a workbench you can C-clamp it down in place or you can hold on to it. So you are going to start at the heel and you are going to time it so that it goes all the way across. You go from one side to the other. You also want to make sure that your stone, I am not going to use as much pressure as I normally would because I cannot mount it on this showcase, you want to alternate from side to side to keep your bevel centered. Some people will take and do three times on one side and then three times on the other, the problem is that your backhand is never as good as your forehand and you end up cheating and you are going to end up with a blade that is offset. That is going to take it and thin down, you are going to get a thin bevel right on the edge. Once you get that V established, you can go from the coarser side to the finer side. It is the same thing; you want to alternate from one side to the other. Just keep working it until it smooths out. Usually it does not take quite as long on this side because you are just smoothing it out. As you go through the finer stones, if you just choose to do that you are just polishing. The other question is angle; how do I know what angle to use? It is a real simple guide. If you can imagine this was a big cube of butter and you know how it goes bad? You are just going to filet the top of it off. Again, there are people that do it other ways that work for them great. This is a tried, true simple way of doing it.

Hello Everyone, Today we Restored the antique butcher's knife into a good looking Dagger. I got this knife from my elder brother's junkyard i insisted him to let me restore it and i surprised him giving a restored and good looking dagger like knife. We really did alot of hardwork on this butcher's knife and the finishing view of this restored knife is really enchanting. And badly i did not take a good pic of old knife for thumbnail so that's way i used patch tool to make some more rusty and attractive. The finishing view seems like a King's Dagger. I am still wonder that i made that pretty knife. Antique Handmade Butcher's Knife RESTORATION Anyways i did restoration just for fun because the effort and time, i put on this restoration is much worthy and we even can buy such a new Butcher's knife for less amount. Remember that use the acid with complete safety and having complete information because ACIDS are not playing liquids MUST wear safety or rubber gloves and keep outside all the procedure while you are using the acid because alot of gases fumes releases while the reaction takes place. Plastic surfaces leaves less bacteria on the board then wood cutting boards. When the blade makes an indentation into the board, it leaves less of a groove in the Plastic Material. When you use wood cutting boards, Microscopic Parasites work their way into the deeper grooves of Wood Cutting Boards and are harder to clean out unless you use chemicals. Chemicals are not safe for foods. Plastic is slippery when in contact with water, thereby cleaning easier. There are 3 Essentials Knives to have in any Kitchen. Just three ingenious folding operations turn the card into an elegant pocket utility tool. Less bulky than a pocket knife and as sharp as a scalpel. The Mens Brand - Card Knife is thinner, lighter and due to its use of 420 series surgical stainless steel: sharper. Sharp enough in fact, that it can cut through an automobile safety belt in an emergency. The Mens Brand - Card Knife was originally designed as a lightweight surgical knife that can be easily transported and safely disposed of by hospitals and medical centers together with paramedics and aid workers throughout the world (without needing expensive and wasteful sharps containers). Card Knife's unique surgical blade technology features an extra long 65mm cutting edge that ensures longer lasting sharpness (conventional utility knife blade edge is only 25mm long).

One of the most important tools in any kitchen, is the Chef Knife and throughout the years I have tried to continuously improve the quality of my cutlery all around the kitchen. This is my 3rd unboxing video I have done on the channel and this knife is a bit different than the previous two in a few things. For one it is a 9.5" chef knife which is the biggest chef knife I own. I love reading into the different knife-making techniques and also learn about how the knives are forged. There are knives that are still forged in fire by hand, which I find really amazing. Orient Knife for Sale on Amazon: https://goo.gl/Ze4s6U
