Hi. My name is Dan Delavan. I am the Owner/Operator of Plaza Cutlery in Costa Mesa, CA. We have a great selection. We also have a website; plazacutlery.com. Today we are going to be talking about knives. A sharpening stone is a stone that has got a coarse side and usually a finer side, and that is going to take and re-shape your edge and get it back down thin enough in order to sharpen it. You are basically taking something that is blunt and thinning it back down. You have to remove all of this extra metal and get it back down to where it is thin enough to cut. Very simply, all a knife is is a very thin piece of steel to split whatever you are cutting. If the knife is obviously thicker, it is like trying to cut something with a chisel; it is not going to happen. There are two stones. There is the India and there is the crystolon. Once you feel them, obviously the difference is coarseness. The one thing about the India stone, it is a harder stone and the brown is the finer side, you have to use oil with it. You cannot use it dry, so therefore it is messy. The coarse stone will cut the metal off quicker but it is going to give you a rougher edge but that way the job gets done quicker, without the oil. It is not as messy. This is just a real simple set up. If you do wood work you can make a little wooden box and rout it out. In this particular case it is just a 2x4, stone traced out, finishing nails tapped down so they are deeper than the stone so when you drop the stone in, if you are at a workbench you can C-clamp it down in place or you can hold on to it. So you are going to start at the heel and you are going to time it so that it goes all the way across. You go from one side to the other. You also want to make sure that your stone, I am not going to use as much pressure as I normally would because I cannot mount it on this showcase, you want to alternate from side to side to keep your bevel centered. Some people will take and do three times on one side and then three times on the other, the problem is that your backhand is never as good as your forehand and you end up cheating and you are going to end up with a blade that is offset. That is going to take it and thin down, you are going to get a thin bevel right on the edge. Once you get that V established, you can go from the coarser side to the finer side. It is the same thing; you want to alternate from one side to the other. Just keep working it until it smooths out. Usually it does not take quite as long on this side because you are just smoothing it out. As you go through the finer stones, if you just choose to do that you are just polishing. The other question is angle; how do I know what angle to use? It is a real simple guide. If you can imagine this was a big cube of butter and you know how it goes bad? You are just going to filet the top of it off. Again, there are people that do it other ways that work for them great. This is a tried, true simple way of doing it.

Hi folks, This is my method of how to sharpen knives at home for personal use or for professional use in the restaurant industry or for butchery industry. I was a professional Tally boner for 6 Years in the meat works where we got paid by the number of sheep or beef we could bone out in a set day...!! In my case as a tally sheep boner it was 110 sheep a day so the faster your crew and my self could bone out the sheep carcass, that meant you could finish work sooner and go home. The French Nail was a knife made during World War One that was created due to a need for melee weapons in the trenches. It was typically made near the battlefield from local blacksmiths and given to the troops on the frontlines. Since raw materials were in short supply during the war, troops had to salvage the metal to make these knives from whatever they could find. Scrap steel from metal posts and rebar from defensive structures were the chosen material for the French Nail. It features a spear point, leaf-shaped blade with the metal bent in a way to form a guard for the user’s hand all in a one piece construction. It can be seen in the popular video game Battlefield 1. Today, I am going to attempt to craft one of these trench knives. Since these were made from steel salvaged from reinforced concrete fortifications, it's only fitting to use rebar. I will forge out the blade first, cut the steel to the desired length, and grind to shape. I made a number of mistakes along the way, first of which was bending the handle perpendicular to the blade. Later on, I correct this by twisting the blade to be parallel to the handle, even though it wouldn’t have been a problem to the function of the knife. I also made the handle a bit large, which in turn made the blade shorter than I would have liked. Next time, I’ll take extra time to mark out my bends. The grinding really made up for a lot of my shortcomings while forging. I got most of the hammer marks out with a 120 grit finish. Lastly, I sharpen the knife and its ready to test out on some water bottles. While testing the trench knife, I noticed the leaf shape is perfect for piercing. It went in like butter and I almost didn't realize that the knife already had pierced them. I know its just plastic, but blade geometry really makes a difference. Down the road, I plan to make another French Nail, one that is a little more historically accurate and, frankly, better looking. Forever Sharp is the brand, this knife is a few years old, has a lot of wear and the edge bevel is starting to hit the top of the primary. This really slows down sharpening as I am working the primary grind when sharpening the knife. This is mainly because I set the edge at 10 dps and then micro-bevel just 1-3 passes at about 15 dps (all free hand). This is used in the kitchen by friends and family so I left the edge at a bit on the robust side at 0.010" thick. For a pure fillet (soft food knife) it could easily be worked down to 0.005" thick, but as this one is likely to cut frozen foods and such on occasion I left the additional thickness to prevent a major failure. With the regrind it will now sharpen much faster and show a little improvement in cutting ability. This only took about five minutes per side on a 1x30" belt sander with a 36 grit AO belt. Note the edge was never ground, just the steel above it.
