A lot of classic cocktails were invented in the 19th century. We're talking 18th century. So it's definitely earned its name. We're going to start with two ounces of rye whiskey, rye not bourbon, in this case. Because I think it tastes better, bourbon is a little sweeter, and rye is also what they used back in the 19th century. It was much more popular then. For our sweetener we're going to use a little bit of simple syrup. You could also muddle a sugar cube if you want. I just think this mixes better. Just bar spoon of that, not too much or it's going to get way too sweet. Two dashes of angostura bitters and two dashes or orange bitters, which are a little harder to find, but they are available at some specialty stores and I think they're really important in making a great Old-Fashioned. You can make a good Old-Fashioned without them two dashes, but not a great one, for my money anyway. Now you notice I'm not going to muddle anything in this drink. I'm just going to stir it the way it is right now. The muddling of the orange and the cherry was something that came about in the 20th century in the '50's post-Prohibition. A lot of stuff got changed around in Prohibition. People forgot how to make certain drinks, taste's changed, so I'm not saying that's a bad drink. I just don't think that's the most classic way to make it and I prefer it this way. So we're stirring it the way it is. All right, let's get our ice, and I'm going to get my frozen glass, and the Old-Fashioned is served on the rocks. And because it's all spirit, and we're going to sip this drink, it's a really stiff drink. We don't like those ice cubes to be really small, because they melt really fast. They dilute the drink too much. Give it a nice stir there. So what I did was I took a muffin tin and I put some water in that and made these big giant ice cubes. So it keeps the drink cold, but doesn't dilute it too much. It doesn't get too watery. The perfect balance of both worlds. All right, let me grab that ice. Tell me that doesn't look awesome. All right, that should be good enough. And now we're going to garnish this, as we strain it over our nice hockey puck, with a lemon peel and an orange peel. That's the only fruit we're going to put in this. I think maybe that's how the orange and cherry muddling thing started to make it's way into an Old-Fashioned. They used to put peels on them, and then maybe people started putting the whole fruit in them, I don't know not recommended. So holding the pith towards us, the white part towards us, and just squeezing gently the oils out into the glass. As there's the lemon and drop them in there, and there you go. It may not be how Don Draper makes it, but it's probably how George Washington did the classic Old-Fashioned.

HOW TO MAKE THE BULLEIT OLD FASHIONED Bulleit whiskey stirred to perfection with bitters, sugar syrup and orange. Any bar worth its weight in bourbon has an ‘Old Fashioned’ prominent on their cocktail list - that’s because it perfectly balances the whiskey with sweet and bitter. When made with Bulleit Bourbon aged 10 years in charred American White Oak barrels, the result is heightened by its rich woody aroma, hints of vanilla and dried fruit. It’s all finished with the aromatics of Angostura, along with the orange’s essential oils. Sugar, water, spirits, and bitters. That's it. The earliest Old Fashioneds were actually with Cognac. And it does make a wonderful drink, but I find adding sugar to Cognac can be a little too sweet for my tastes. I like it a little bit more dry, a little bit more bracing, so I drink rye Old Fashioneds. Bourbon Old Fashioneds work wonderful, rum. Stay away from gin. White spirits don't usually take so well to the old fashion treatment. So a rye Old Fashioned, which we'll be taking today, deadly simple. You have two ounces of your spirit, roughly a bar spoon worth of sugar syrup. This is a demerara sugar syrup. It's a little more flavorful than a granulated sugar or a white sugar syrup, a simple syrup. Take roughly a bar, it's about an eighth of an ounce, give or take. Drop that in there. Ice will be your water. It serves to both dilute and cool the drink. As you spin it around. And then stir. Your stirring technique is really whatever works for you. I've seen this. I've seen that. This is the most comfortable for me, but I do a lot of stirring of drinks so anything that works is fine. Once you have your drink properly chilled and diluted, add your strainer. Take your chilled rocks glass, add ice, and strain. Garnish with a citrus twist, orange, lemon, both whichever you like. Express the twist, and smile. And that's how you make an Old Fashioned.

Old Fashioned – Strong and simple. Made for slow sipping, this vintage cocktail serves to enhance a whiskey’s flavour by adding sweetness, bitters and dilution. History: Adhering to the original definition of a cocktail (spirit, bitters, sugar and water) the Old Fashioned dates to 1800. What is incredible is how little it has changed over the intervening 200 years. In its infancy, the drink went by the name ‘Whiskey Cocktail’ and was actually enjoyed in the morning, as cocktails were, to restore and act as an ‘eye opener’. By 1840 it had gained cult status and was the mark of the young, sophisticated man-about-town. Thirty years later, the bartending scene had moved on, and with the addition of new liqueurs, bartenders started to become a little too experimental, adding in dashes of this and that to the Whiskey Cocktail. If this sounded unappealing (which is was) you called out for an Old-Fashioned Whiskey Cocktail. In the 19th century, the drink adopted a few changes, most prominently becoming served over ice. It was also no longer a quick, down-in-one morning pick-me-up, but rather a slow sipping cocktail. Prohibition’s 13-year interlude harmed the Old Fashioned, with chunks of fruit being mashed into the drink, maraschino cherries to garnish and then topping off the fruity mess with soda. Thankfully a revival of the cocktail saved the traditional recipe and has ensured this charming, whiskey-rich drink has made it safely into the 21st century. Finally, the great debate: rye or bourbon? In fact, an Old Fashioned can be made with almost any spirit, let alone whiskey. Experiment with mezcal, Cognac and aged rums; they all work, but any decent bourbon or rye works splendidly if you’re keeping it traditional. As cocktail historian David Wondrich wrote: ‘Cheap bourbon is already sweet enough, and good bourbon doesn't need any help going down.’

Irish Old Fashioned - A Modern Whiskey Cocktail (St. Patrick's Day Drink)
Learn how to make the Irish Old Fashioned with Whiskey, Benedictine, Orange Bitters and Angostura Bitters, that's perfect for Saint Patrick's Day. This cocktail is an update on the classic Old Fashioned (https://youtu.be/7beRz3cAT4Q) by Jack McGarry, the co-founder of The Dead Rabbit Grocery and Grog in New York. This drink subs in Irish Whiskey for Bourbon, Benedictine for Simple Syrup (https://youtu.be/62YNp0jgzvU) and adds Orange Bitters. About the only things that remain are the Aromatic Bitters and the Orange Twist. This variation may give the original Old Fashioned a run for its money. It's really complex and herbal and spiced and citrusy and it's extremely easy to drink. If you love the taste of Whiskey, you'll like it. If you don't love the taste of Whiskey, you'll like it too. It really meets at a great nexus of flavors. One of the keys to getting it just right is to control the level of dilution. You need to make sure it's diluted enough to take some of the sting out, but not enough to totally thin out the flavors. Obviously for the Benedictine, make sure you're using actual Benedictine and not B&B (the pre-made cocktail). The problem is that the bottles and labels look pretty similar. But just make sure it's Benedictine. I guess if you use a non-Irish Whisk(e)y for this drink, I'm sure it will still be awesome, but I guess you'll have to come up with another name for it. For the Irish Whiskey, I like using a Single Pot Still Irish Whiskey, or what used to be called a Pure Pot Still Irish Whiskey. The distinguishing mark of an Irish Whiskey is that it is made from both malted and unmalted barley (as opposed to a Single Malt Scotch, for instance, which is all malted barley). Most Irish Whiskeys (Blended Irish Whiskeys) start off as Single Pot Still Irish Whiskeys, but then neutral grain alcohol is added to help stretch out the product and make it cheaper to produce without sacrificing potency (proof). This results in the Blended Irish Whiskey having a thinner taste to it. The Single Pot Still Irish Whiskey has a much bolder, meatier flavor to it. Red Breast, Green Spot, Powers Signature Release, Powers John's Lane, etc. are all good Single Pot Stills. I like Green Spot for this one, but use whatever tickles your fancy. Sláinte! Recipe: 2 oz Irish Whiskey 0.75 oz Benedictine 2 dashes Orange Bitters 2 dashes Aromatic Bitters garnish Orange Twist Stir over ice. Strain into chilled rocks glass over ice. Garnish with orange twist. To understand the Old Fashioned is to understand the origins of the cocktail, as well as its evolution. The original definition of a “cocktail” was “spirit of any kind, sugar, water, and bitters.” When bartenders began to experiment with the addition of vermouth and other ingredients in the late 1800’s, customers wanting a cocktail made the old fashioned way would ask for it specifically as an “Old Fashioned”. Old Fashioned - How to Make the Classic Whiskey Cocktail like James Bond (Cocktails & Pussy Galore)
How to make an Old Fashioned worthy of being called a James Bond cocktail. The series, Cocktails and Pussy Galore, shows you how to drink like 007 using the Ian Fleming books (not the movies) as the source, which takes you beyond the typical James Bond Martini. The Old Fashioned was a drink originally created in the late 1800's as a rebellion against elaborate alcoholic drinks. It was an attempt to go back to an old fashioned style of cocktail. The true definition of a cocktail is said to be a combination of a spirit, bitters, water and sugar. So this, the Sazerac (http://youtu.be/gxYEdsT06uk) and the Cranston (http://youtu.be/8HLMWpvm8Y4) would definitely fit into that definition. The Old Fashioned was, at one time, commonly made with an orange wheel and candied, maraschino cherry mashed up in the base of the drink. Those are often not as great as the recipe I prefer. Also, another common thing that people do is use a sugar cube instead of Simple Syrup (http://youtu.be/62YNp0jgzvU). That's why a lot of Old Fashioned recipes call for a splash of water. Essentially the idea is to use the water to make Simple Syrup, so just cut out the middle man and use Simple Syrup. Another variation is to use Rye as the base spirit. Totally acceptable, but James Bond preferred bourbon, so that's how this one was made. In the books, James Bond was a huge whiskey drinker. He practically fiended for the stuff. He drank more whiskey than any other drink. Yet, that was changed a decade later when the Connery movies started coming out. In the second book, Live and Let Die, Bond imbibes some Old Fashioneds and stipulates that they be made with Old Grand-dad bourbon. Since Bond, liked strong, well-made drinks, you should opt for a Bonded or Bottled-in-Bond whiskey. Bonded is not a double entendre, it's a designation for American spirits that means it's 100 proof. Most bourbons make an 80 proof product, but for a truer experience, you should go with 100 proof (or 101 in Wild Turkey's case), 007 would approve. Cheers! Today we're going to show you how to make the old fashioned, a classic cocktail with classic easy design. For such a classic cocktail recipe, there are many variations to how people think the original was created. The Old Fashioned Cocktail Recipe: http://recipe.awesomedrinks.com/recipe/old-fashioned/ Cocktail Gear: http://awesomedrinks.com The Old Fashioned - 1 sugar cube - 4 dashes angostura - 2 oz rye whiskey (or bourbon) Garnish: orange wheel and cherry (optional) The old fashioned cocktail is best made simple. Remember, the classic cocktail design is alcohol, bitters, sugar and water. So, an old fashioned should contain just those and that means _no fruit_ is part of the recipe build. Sure, people have been muddling fruit in an old fashioned for dozens of years, but that isn't the classic old fashioned design. We want to make one that truly defines the name "old fashioned" in the oldest style possible. If you want to add orange wedges and cherries with muddling then go ahead, but you first will learn from us how it was traditionally done before you add modifiers to its creation. The only modifier we've applied is to supply a garnish for the old fashioned. Garnishes on the original drink probably were not something used, but over the last hundreds of years it no doubt has become a garnish of sorts. So, we'll use our fruit as a garnish, not as an ingredient in the old fashioned recipe build. The Sazerac's one of the most classic of cocktails after the Old Fashioned. It's basically a variation on the Old Fashioned. It's sugar, water, spirit, bitters. Only we're going to change the bitters from old Angostura or Aromatic or Boker's to Peychaud bitters. We're also going to rinse the glass with absinthe, which you can do either by putting in an atomizer and spraying it or, you know, if you're feeling adventurous something a little more like a spit flick. Here at Rye House we make our Sazerac in equal combinations of rye and cognac. Cognac being the earliest way of making it. And rye being a little more contemporary. I find a one to one mixture works really nicely. Blending the sweetness and the spiciness of two liquors. Adding in the aromatics and Peychauds and a little bit of the absinthe on top to round it out. So for the 17th Street Sazerac and that's a cognac. Couple dashes of Peychaud, three in this case. A bar spoon of Demerara sugar syrup. Add your ice. And stir. Add your julep strainer and coat your glass with absinthe. We use an atomizer here. It's efficient. It's quick. It coats the glass nicely. If you're feeling a little more adventurous you can take a few drops of absinthe, pick it up and it will coat the glass nicely. Discard the excess absinthe and pour. I'm doing the frosted ones because it looks better. Cut a lemon twist. Express it over the glass, be sure you get the rim. Discard. And smile. And this is how you make a Sazerac.

Set aside. To make the drink: measure the rye whisky, Grand Marnier Salted Caramel and bitters into a mixing glass. Stir with a bar spoon to incorporate the caramel. Fill glass three-quarters with ice and stir until well chilled. Fill prepared glass with ice, strain in drink. Zest lemon over the top of the drink to release oils and then drop in. Watch how to make caramel here: http://youtu.be/muTtsJ5zo2c Recipe for Salted Caramel with Grand Marnier Makes about 1 1/4 cup 1 cup sugar 3 Tbsps. salted butter 1/2 cup heavy cream 1/2 tsp. sea salt 1/4 cup Grand Marnier Place sugar in a medium heavy bottom sauce pan, being sure it is in an even layer. Heat over medium-high heat, stir lightly as sugar starts to melt. Once sugar has started to melted, move the melted sugar away from the outside of the pan with a spoon, then stop stirring and swirl pan around a bit. Keep cooking until sugar is dark amber in color. When using a candy thermometer temp the sugar before it has all turned amber. In order to do this you will have to tilt the pan slightly (This stage is at about 340 degrees F.) Be careful as the sugar can go very dark quickly here and burn. Turn the heat off and quickly whisk in the butter -- until it is incorporated. Then add the cream and salt -- caramel will bubble up so be careful. Stir quickly to incorporate. Then stir in the Grand Marnier. Cool sauce. Place in a glass jar and store refrigerated for up to 3 weeks. Bring to room temperature before using.

There are two ways to make your cocktail; one is to stir it on ice in a mixing glass and the other one to brutalize that ice inside of a metal tin. Generally speaking liquor on liquor drinks are stirred, and anything that involves a lot of citrus or needs to be light and airy will be put in a shaker. Shaking is going to incorporate air into the drink whereas stirring it sort of lets everything blend together and get nice and well melded. So depending on what you want you're going to shake or stir your drink. An old fashioned for instance is always going to be stirred. If you see someone shaking a Manhattan you have my permission to throw things at them; they need to be stopped. I did that once. I was at a bartending audition for a job. God help me; the manager shook a Manhattan. I thought the GM was going to pop a blood vessel. It was beautiful. You know, a liquor drink like an old fashioned or [Sassenach] can go in the mixing glass. When it pours out it's going to be silky and even on the tongue. We're going to start by stirring a cocktail, and we're going to make a rye old fashioned. A rye old fashioned is simple; sugar, spirits, waters, and bitters. We're going to put in about two ounces. I'm a professional; I know exactly how long it takes to pour two ounces out of that. I suggest you use a jigger, or honestly, it's not a big deal. A bar spoon or roughly an eighth of an ounce of sweetener; this is [demoraris] syrup. It's made from dark sugar that still has molasses in it, so it's more rich, flavorful sugar as opposed to simply syrup which is made from white granulated sugar. Bitters; in this case we have [angostura], which is a classic cocktail bitter, and two dashes should do us. You can feel free to substitute any bitters or sweeteners or spirit you like for that matter. The rye old fashioned is your classic, you know, this is how your grandfather drank, if your grandfather was a railroad baron. Mine was not. You add ice, which you can crack or not crack depending. It'll speed dilution if you do, but it doesn't hurt if you don't. And you stir it; some people say it's 50 stirs, some people say it's 50 seconds. I just do it until it looks right, smells right, and you know, taste everything. Taste, taste; that's what you're doing this for after all--and that'll do us. Take a nice good old fashioned julep strainer. We of course use pre-chilled glasses, because, why wouldn't we? You can stick them in the freezer and they'll chill up pretty quickly. Glass is a very bad thermal conductor, but once it gets good and cold it'll stay that way. Strain it off into the drink. You'll notice we have avoided the brandied cherries, the orange wedge; those are options for you old fashioned. But they reflect a later period in the old fashioned's development, one where prohibition had reduced the quality of the spirits to being basically bathtub spirits, and you wanted as much sweet floral flavor as you could get to cover that fact that you were basically drinking wood alcohol and you were going to go blind. You're still going to go blind on this if you work at it hard enough, but it's a lot tastier, trust me. Cut an orange twist carefully, very carefully. Express the twist by taking it in your fingers like so, and bending it in half gently. You can't see it in the light, but there's a little shower of essential oil that goes on top and it gets shinier on top. Wipe it in and enjoy.
