I guess that the old adage "never cut toward your hand" only applies to the dull knifes. This is a masterful knife work. Having good tools makes very little waste.

Their knife skills are incredible. Watching them work with fish is simply amazing. The japanese have a great tradition of keeping traditional art forms alive. The way they cut fish is an art form. Anyone who says this is simple is ridiculous. if you think its easy go buy a new sharp knife. buy a knife handmade by a japanese master. Then practice for a day. Then tell me if you can match their speed any precision.

for cut fish , you should know anatomy, resistance of each bone skin bone cartilage, know the temperature and hygrometry of fish (between near frozen and hot and coocked), cut in same direction than fiber, avoid put scale or bone on your knife on the meat you cut, think to the texture you want have on the cut, think of the patern you want,..you will need different and specific knife.. and most important skill exeperience and dexterity... masters say you need at least 10years of experience if you are good...and best chief of the world have Nothing but agree to ajnowledge their skills^^
